The color change is the result of a chemical process. A berry grows red or white by loosing its chlorophyll and accumulating anthocyanins. Bearing in mind the location of the plot, the vine-grower thins out the leaves on the North or the East side to expose the clusters to as much sun light as possible. This also helps prevent the rotting of the berries, and provides space for the remaining clusters. |
