Once you have removed the capsule and cleared all from the neck of the bottle, it is important to wipe the neck with a clean, damp cloth and then dry it with a clean towel. |

To begin one needs to slowly and carefully tip the bottle in order to allow the wine to gradually pour into the receptacle (carafe). A 75 cl. bottle it should take approximately one minute to decant. |

Bit by bit, the wine becomes clearer in color and one sees, thanks to the light of the candle or flashlight, the progression of the silt stretched along the bottle. One must stop pouring the instant that this sediment arrives at the neck of the bottle. |

Never redress the bottle during the decanting or the deposit will be mixed with the clear wine. |

For best results, decanting should be done two hours before serving most wines. Very old wines (fifty years or more) must be decanted just before serving. |
