The vat room

The vat-room is at the heart of the art of vinification.

Traditionally a vat was made of wood.

Château Haut-Brion was the first estate to use stainless steel vats in 1961.

The current vat-room is the most advanced in the wine estates. It was first used to keep wine during the 1991 harvest.

Jean Delmas designed the new vats, made with two separate chambers.

Above the vat-room, there is a computer-room where the temperature of each vat is controlled at all levels at all times.

From the vat room, the wine next passes into barrels and continues on to be stored in the chais.
