The grapes upon arrival in the chai were lightly pressed. After clarifying, the must of the grape was put into specially chosen barrels to assure a tranquil fermentation. Only 45% of new wood is used for our top wines in order to allow the wood to participate but not dominate. A maturing of the wine on the lees in the barrel and subsequent stirring, carried out by our experienced workers in the chai, permitted the wine to expand. During the blending the best lots were selected to make the top wines. This year an extremely strict selection was necessary starting on the vines (55% for the top wine when usually we use 65%). The end result was simply astounding.

This wine first of all surprises one with the intensity and complexity of its aromas. In the glass, the color is that of a young wine with a greeny-yellow tint. The nose is a combination of floral notes mixed with citrus. This wine is impressive due to its structure and lingering taste. It is amusing to use the term structure which is usually reserved for the reds. However, this wine with its impressive balance between its alcohol content (13°6) and acidity (pH 3.1) is upright and mineral and therefore resembles a sturdy framework. Describing a wine is always difficult. Imagine a trainload of aromatic flavours moving along with no halt in sight and you will have in inkling of what Laville Haut-Brion 2007 could be.

This wine has everything: balance, freshness, fatness, complexity, minerality and intensity. We are approaching perfection. Nothing dominates Everything is in harmony (alcohol 13°9 and pH 3.2). A very subtle color combines a tinge of yellow with nuances of green. A strong nose dominates with whiffs of quince and locust flowers along with a trace of elegant woodiness. From the very beginning this wine’s dimension is impressive. The mouth is full and unctuous. The finale is everlasting. It is superb.
Sauvignon Blanc 55 % ; Sémillon 45% .
